This quick and easy salad recipe will guarantee that you have a delicious side, no matter what time of the year it is! This wonderful tasting salad also happens to be Keto and Low-Carb.
I call this my “All Season Salad” because I make this all year around and it can easily be modified for the season. For example, adding sliced strawberries & fresh sprouts ( I LOVE pea and sunflower sprouts) in the summer or roasted beets and veggies in the winter.
The 2 ingredient salad dressing is quick to make, and a small mason jar worth has you set for a few days.
This recipe is just a guide. You can easily throw in extra veggies, especially if you see something in the fridge that could be on the way out ( aka won’t be good in the fridge much longer) soon, grab it, chop it up and add it. I notoriously do this with bell peppers. I don’t know why I have ½ bell peppers kicking around so much….but I do.
Ingredients
Boxed organic salad
Tomatoes – use whichever you like. I rotate between vine ripened and mini tomatoes
Cucumber
Pickled onions – substitute with thinly sliced fresh onion if you like or omit based on your preference
Olive oil
Balsamic vinegar
Feta cheese
Directions
- Grab a few handfuls of lettuce and add to a salad bowl
- Add chopped veggies, feta cheese, and pickled onions to the salad bowl.
- Mix dressing: 2 parts olive oil to 1 part balsamic. This can be adjusted to your personal taste.
- Toss and serve!
And there you have it. A simple delicious salad. This salad is a great side to almost any meal and I love eating this as a topping on my burgers.
