This recipe is super easy to execute and very versatile. Garlic roasted cauliflower can be used almost anywhere you would use cauliflower rice (or to replace starchy carbs) and it also doubles well as potato substitute – in some instances.

Now, I know nothing really replaces the potato. But when you’re eating lighter, low carb or keto, finding a suitable alternative is key. This dish touches on some of the same flavours and has a similar creaminess to potatoes {ish} 🙂

I like to pair garlic roasted cauliflower with Mediterranean style ground lamb. Imagine a deconstructed shepherd’s pie! This style of cauliflower also pairs exquisitely as side for Indian food. Roasted cauli and curry gravy. MMmm delish!

Cauliflower is the main ingredient, which is great because it’s high in fiber, has lots of antioxidants and it’s low in carbs. That being said I want to give a shout out to the soul if this dish: sea salt, olive oil and of course…the garlic.

It’s really this flavour combination and the crispy edges and creamy texture roasting gives that takes such a humble vegetable and makes it a star 🙂

NUTRITIONAL HIGHLIGHTS

1. Cauliflower is a great source of fibre. This is really important for everyone across the board, but especially getting enough fibre is especially important if you ’if you’re on a low carb keto diet you want to be getting as much fibre as you can.

2. Packed with tons of vitamins and low in calories.
Cauliflower is jam-packed with lots of vitamins and minerals and does all of this while being relatively low carb. Cauliflower is a good source of vitamin C, potassium, folic acid, vitamin B6, calcium, magnesium and manganese.
– Last but not least, cauliflower is a great source of antioxidants. Like other cruciferous vegetables it contains glucosinolates and isothiocyanates. Both have shown to slow the growth of cancer and fight free radicals in the body.

3. Good quality fats! I use coconut oil, which is a good source of omega 3s and has a high smoke point (good for sautée or frying). I finish my dish with some grass fed butter…mmmm. Also a good source of omega 3s and tastes great!

GARLIC ROASTED CAULIFLOWER

INGREDIENTS:
1 head of cauliflower
Salt to taste ( a few pinches)
6 cloves of garlic (more or less depending on your preference)
Olive oil

DIRECTIONS:
1. Prepare parchment lined cookie sheet – less clean up! No sticking!
2. Preheat the oven to 400 degrees on Roast.
3. press 6 cloves of garlic into a bowl. Set aside. Adjust to your own taste – I like it super garlicky! Minced or using a microplane works if you don’t have a press.
4. Cut washed cauliflower. Slice and destem.
5. Combine cauliflower and garlic in a large mixing bowl, add a healthy drizzle of olive oil and a few pinches of salt.
6. Toss well and spread evenly on your parchment lined tray.
7. Roast in the oven for 20-25 mins. Toss after approx 20 mins if the edges are becoming overly burnt.

Take out of the oven & serve.

There you have it. Easy roasted cauliflower. Quick, healthy & delicious.
